mexican cheeseAccording to CulinarySchools.com, Mexican food continues to be the fastest-growing ethnic dining trend, but as Americans have grown accustomed to a standard Tex-Mex style, restaurants are now focusing on more authentic Mexican fare. Datamonitor also notes a marked increase in restaurants offering authentic Hispanic cuisine to the growing Hispanic demographic, along with increased experimentation by Hispanic consumers with U.S. foodservice. With 42% growth in Hispanic population in the U.S. over the last 10 years, the research group expects Hispanic consumers to play an increasing role in the U.S. foodservice industry, as increased time pressures will drive demand for convenience food and beverages.

Other trending ethnic food categories include Pan-Asian with a focus on the lighter-than-Chinese fare of Thai, Japanese and Vietnamese cuisine. Along those lines, Sushi has exploded in popularity—no longer a food for the wealthy, it’s now found in many supermarket take-home counters. Mediterranean food also continues to thrive with Greek restaurants moving toward lighter menus…and be on the watch for new Caribbean menu items.

Consumers are definitely stepping out of their ethnic food comfort zone, adventuring beyond the “big three”—Mexican, Chinese and Italian.
