Springfield, MO. – DairiConcepts, L.P., gained international esteem at the 2008 World Championship Cheese Contest sponsored by the Wisconsin Cheese Makers Association.

DairiConcepts was awarded first place in its category for their Dry Grated Asiago Cheese. The award follows their first place award for Dry Grated Asiago at the 2007 United States Championship Cheese Competition. An international panel of 22 judges selected the cheese from numerous competitors. The company’s Dry Grated Romano received third place and their Dry Grated Parmesan placed fourth in its class.

U.S. consumption of hard Italian cheeses increased 25% from 2002-2006. Demand for Asiago in particular has climbed significantly in the past three years, especially in food service. Versatile Asiago derives its name from a small town in northern Italy. American Asiago is aged to develop mild to sharp flavors. The result resembles a cross of flavors between Parmesan and cheddar. Romano is an assertive hard cheese with high flavor intensity, and Parmesan’s sweet, buttery flavor has endeared it to generations as “the king of Italian cheeses.”
